The oxtail comes from the tail part of the anatomy with a large bone to muscle ratio. When cooked, the collagen melts down rendering a tender, rich flavour ideal in stews, while long, slow braising in a liquid will achieve the most tender result with maximum flavour.

Kalimba Beef is sourced from our very own herd of Angoni Cattle. Called Nguni in South Africa these small framed cattle are reputed to have descended from the herd tat trekked to Zambia by Zwangendaba the Ngoni Chief in 1835. His Successor in Zambia was Mpezeni and today his successor Paramount Chief Mpezeni still heads the Ngoni tribe in Eastern Province. Kalimba Farm cattle are used to 'mow' the grass on the banks of the fishponds where their light frames cause e no damage. Consequently they are entirely free-range and grass-fed year round allowing them to have a distinctive flavour
